Chester’s Award-Winning Restaurant The Forge Appoints New Head Chef

The Forge restaurant at Hotel Indigo Chester has appointed Neil Aitken as its new Head Chef, bringing 14 years of Michelin-starred experience to the acclaimed dining establishment.

Aitken’s impressive culinary background includes serving as Sous Chef at Chester Grosvenor’s Simon Radley Restaurant and the hotel’s Arkle Restaurant. Prior to his work in Chester, he honed his skills at the two Michelin-starred Midsummer House in Cambridge, working exclusively in high-end establishments throughout his career.

A Chester resident for nine years, Aitken is married with two children, both born in the historic city. He brings a passion for fresh local produce and fire-based cooking techniques, particularly utilizing Yakatori and Josper cooking methods.

The Forge, which opened in 2021 and earned 2 AA Rosettes for Culinary Excellence in 2023, has established itself as one of Chester’s premier restaurants. The 70-seat establishment features an open kitchen that cooks over wood and charcoal, specializing in wild and locally reared meats aged on the premises.

While predominantly meat-focused, the restaurant also offers fish, vegan, and vegetarian options. The Forge partners with Aubrey Allen, a third-generation family business and supplier to the Royal Household, to source ethically produced meats.

Michael Lyons, Cluster General Manager of Hotel Indigo Chester, welcomed the appointment: “We’re delighted to appoint Neil as our new Head Chef as well as launching our new winter à la carte menu. Neil brings with him a wealth of experience and expertise in the hospitality and catering industry.”

The appointment coincides with the launch of The Forge’s new winter menu, promising seasonal dishes that showcase Aitken’s Michelin-trained expertise combined with the restaurant’s commitment to sustainable British ingredients.

The Forge is located within Hotel Indigo Chester on Grosvenor Street.
